Holiday Season

well, my goodness, I cant believe that a whole month has passed me by already! I hope that the month of November was good for everyone. My daughter and I had a fabulous Thanksgiving day and the turkey I cooked turned out better than ever before. I didnt have the camera out that day but I now wish I had a phote to post! So, what did you do with all those leftovers? I made some turkey enchiladas, one to eat and one to freeze.

I will be doing some baking this month so look for some great recipes and pics of my goodies, and if you live nearby you may even get some to try! Until next time, :)

Crock Pot Monday!

well, here again...in my last post I should have mentioned that I am getting my meal ideas from "the crock pot girls" over on Facebook.  They give me ideas and then I take it from there.  I like to try out foods that are freeze-dried or dehydrated to find products that my family would like to eat in case of an emergency power outage or some sort of natural disaster.  For the "fresh" recipe please feel free to head over to "the crock pot girls"

Todays recipe is for Potato Soup:

2 c potato chunks dehydrated
4 T freezedried onions
1 t minced garlic
1/2 stick butter
6 c chicken stock
salt and pepper to taste

Place all ingredients in crock pot and set on low for at least 8 hours.  Majority of the liquid should be absorbed by the potatoes.

1 c diced ham
1 c cheddar cheese  ( in the future I hope to get some freeze-dried to try out)
1 c evaportated milk

Add to crockpot mix well and let cook 30 minutes longer.

Crock Pot Monday

Hello there, another week has begun and about 2 weeks ago we (my daughter and myself)  decided that since Monday is a late day at work that I would be sure to make a meal in the crock pot this way Shelby would have a hot meal and not have to wait until I got home after 7 p.m.  So, I am trying a meat loaf in the crock pot:

1 lb ground turkey
1/4 c TVP soaked
2 T freeze dried onion
2 T freeze dried bell pepper
4 shakes of Worchestershire Sauce
1 1/2 c crushed crackers
3/4 c milk
salt and pepper
combine all ingredients in a bowl and transfer to crock pot. Shape into round loaf.

Combine 1 can cream of mushroom soup and 1 cup broth of your liking, pour over loaf and set on low for 8 hrs.

Serve with rice and broccoli.

Sounds good yes??  I liked the taste of the loaf but was a little on the moist side.  Didn't slice at all.  Will definately try this recipe again with some tweeks.  I hope that in future posts I will be able to share some photos of the finished product.

On a side note:  Fairly disappointed with the photos I took of my cards I will be working on lighting, I am glad to report that "D" loved the cards and even asked about some Christmas cards...woo hoo!

a wee bit longer than expected

So, I always have good intentions!  The past week was way more busy than what I would have expected, there was a staff meeting at work and that really took out a chunk of my free time to get these cards done.  I hope that "D" likes what I have come with.  Enjoy!

Sleep in

So I am a dental assistant and right now we have started something new at our office, we get to follow one dentist ( we have a group practice consisting of 7 general dentists) and work soley with that one dentist 5 days a week.  So today is Wednesday and my doctor has a late shift so no work until 1pm...I thought I would make this a craft morning and sit down and make a package of birthday cards for one of my co-workers.  She has requested 3 cards that may be used for anyone boy or girl and 2 cards that are geared towards a little girls.  I have been thinking about them for 2 days and I think I have some great ideas down on paper now to go ahead and start the process.  I will post what I come up with.
